Red, White, Blue Jello Shots: July 4th Weekend Treats

The long weekend is almost here and as we get ready for beach parties and family gatherings, what better way to celebrate than with "Independence Day" Jello shots?  Portable, colorful and always fun (with or without alcohol) try our MLV recipe for these red, white and blue treats. These layered Jello shots can be made in small "shot" cups (as pictured above) or in paper cups and other molds like ice cube trays (see picture below, ice cube "star" shape.)  The shots can be made with or without alcohol (kids will want them too.)  Beautiful and delicious either way and they're easy once you have everything set up.  The wait is worth it... patience, mi gente! Kitchen utensils:  measuring cups, whisk, large bowls, saucepan for boiling water. 3 oz clear plastic cups (better looking "shots"), or paper cups and/or ice cube trays for molds (for these, you'll need to spray the paper cups and trays with Spam or other oil spray so that jello doesn't stick and gelatin can be easily turned over and served on trays) For Red: 1 large box (6oz - or two 3oz boxes) Raspberry or Strawberry Jello (Raspberry tangier and more flavorful, best) For Blue: 1 large box (6oz - or two 3oz boxes) Berry Blue Jello (or blue gelatin) For White: 6 1oz unflavored Jello or gelatin envelopes (they usually come in smaller sized packages) 1 can condensed milk (Magnolia is my favorite... and this is my "Latino" twist, far better than "half and half") 6 cups boiling water, 4 cups cold water 1 cup 80-100 proof vodka for Blue (last) layer - Vodka preferred, can use white rum (note: careful here, Vodka and Rum work best.  Other liquors can alter consistency.) Flat tray (metal) to hold cups in the refrigerator if not using molds. PREPARATION:  Boil 2 cups water Pour raspberry gelatin envelope in bowl Add the 2 cups boiling water to raspberry gelatin powder and stir until fully dissolved Add 2 cups cold water Mix thoroughly and let mixture cool at room temperature Pour into cups in equal parts, leaving room above for next two layers Chill in refrigerator for at least 2 hours or until set/hardened SECOND LAYER:  WHITE Boil 2 cups water Pour 6 unflavored gelatin envelopes in bowl Add 1 cup of the boiling water to unflavored gelatin powder and stir until fully dissolved, then add 1 cup cold water to this mixture.

For something easy and tasty, but not quite as fancy, try these:
Chocolate covered cherry: Cherry Jell-O with Creme de Cacao. Use equal parts boiling water and liquor. Put a maraschino cherry in the shot cups before filling to fancy it up a bit.
Fuzzy Navel: Orange Jell-O with peach schnapps.
Pudding shots are awesome too. I use a large box of chocolate fudge instant pudding and replace 1/2 of the milk with a mixture of Bailey's & Kahlua for a mudslide. Once the pudding sets, fold in a tub of Cool Whip until smooth. It's almost a mousse texture and they're so good!
